There’s nothing better than a summer salad, cool and refreshing on a hot day. Gone are the hearty meals of winter, replaced with the freshest local produce, light and healthy, and perfect as sides or meals themselves. Today I’m sharing a low fat Summer Honey Sesame Slaw that Ari created, that’s fresh, easy to make and perfect to bring to any picnic or barbecue.
If we’re being honest, there are gigantic benefits to having a best friend who is a classically trained Chef and longtime Director of Food & Beverage. If I’m struggling with a sauce or a recipe, a quick call to Ari usually salvages it, and leaves me looking like an expert in cuisine. I’m not a huge cole slaw fan, but this healthier version was light enough that I went back for seconds… okay thirds. It’s a fresh take on a classic, and the addition of micro greens, ginger and honey make it a guaranteed hit at any event you make it for!
As many of you know, we’re growing herbs and micro greens, so it was super exciting to use our own fresh micro greens in this slaw. Micro greens are sold everywhere nowadays (yes!) so you should be able to find these at any local grocery store nearby. If you’re local to the Buffalo, NY area, I highly suggest Herb’N Garden Farms micro greens (shameless plug alert). 😉
Here’s a quick shot of Kevin harvesting some micro greens to go straight from the soil to the salad (because honestly, does it get any better than that)!
To start this recipe you’ll need one quart of shredded slaw mix and one cup of micro greens.
From there, you’ll move onto one clove of garlic, one teaspoon of fresh ginger and one teaspoon of salt.
Next, cut one lime in half to prepare to juice it and add one Tablespoon of cilantro.
Your slaw “sauce” will consist of honey, vegetable oil and red wine vinegar (if you have local honey available, I highly recommend it – it has tons of benefits for your health).
Now we’re ready to create! Seriously though… the ingredients alone look amazing, and putting it all together just makes it even better!
To start, grab a mason jar (or any jar you have handy) and add the juice of one lime, oregano, vegetable oil, honey and red wine vinegar to the jar. Ari used an immersion blender to emulsify, but this can be done without the blender. Throw in the salt, ginger and garlic clove and blend that all together into a vinaigrette. Pour that over your slaw and add some pure sesame oil. Gently mix this together to evenly distribute your vinaigrette through the slaw. Add your micro greens and stir gently.
Top with a smidge of micro greens to garnish and prepare to leave your friends in awe. The taste is perfection, the health benefits are immeasuarbale, and no one will believe a salad this fresh and delicious was so easy to throw together. Summer is here, and this healthy dish is exactly what you need!
